Grilled Paddlefish Taco Bowl with Lime Slaw

Ingredients

  • 1 1/3 lbs. paddlefish meat
  • 1 lime, juice
  • 2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp oregano
  • salt and pepper
  • 3 cups cabbage, shredded
  • 1/4 cup cilantro
  • 4 green onion, sliced
  • 1 Tbsp mayonnaise
  • 1 1/2 tsp honey
  • 1/2 tsp cumin
  • 1 avocado, sliced

Directions

  1. Squeeze the lime juice onto the fish. Sprinkle with chili powder, garlic powder, onion powder, oregano, and salt and pepper to taste. Let rest for 15 to 20 minutes.
  2. Meanwhile make the lime slaw dressing by combining mayonnaise, lime juice, honey, and cumin. Toss with cabbage, cilantro, and green onions. Season with salt and pepper to taste. Set aside.
  3. Preheat grill or broiler to medium-high heat.
  4. Place the fish on a piece of foil or grilling plate and place it on the grill. Grill or broil for 6-8 minutes or until the fish cooked.
  5. Serve with slaw and avocado.

Substation Tip

Any firm white fish can be substituted for paddlefish.
