We make delicious, sustainable paddlefish caviar. Every part of the process, from spawning fry to making caviar, is under our supervision. We “ranch” our fish in open water for 10 years. This gives them the opportunity to forage and self select their preferred diet. We call it Free Range Caviar. You can taste the difference.

Rainbow Trout raised in glacial artesian spring water in a cold water NON recirculating system. We hatch from eggs and hand rear our fish in an indoor facility creating a sushi graded product. We process our fish fresh on site in our licensed processing facility. We specialize in hatching and getting our fish to fingerling size for customers that want to raise them larger sizes. Customers can order and purchase orders for pick-up or local delivery on fresh filleted fish orders. Sizes are generally seasonal, but access to fillets ranging is weights of 4 to 6 ounces are usually available.

Branch River Trout Hatchery was started in 1985 and is one of the oldest private fish hatchery s and private processors in the state. We raise Brook Trout and Atlantic Salmon for primarily food products we do in house. We are also one of the 1st wineries in the state of Wisconsin. This combination is unique to the industry and TSW entertains appx. 10,000 visitors per year.

ColdSnap takes a 21st Century agricultural approach to produce greens, veggies, and fish in a simple closed-loop system that’s ecologically sound. Their 10,000-square-foot greenhouse provides a year-round growing environment, with harvesting happening 365 days per year. They do not use pesticides, herbicides, or commercial fertilizers in their production system, making their products all-natural, and chemical-free. Our company grows 90,000 heads of lettuce, spinach, microgreens, tomatoes, cucumbers, kohlrabi, beets, and other shallow root veggies, ColdSnap has partnerships with local schools. hospitals, restaurants, and grocery stores to provide them with fresh produce.

We sell yellow perch only on our fish farm. Most perch are sold when they are 1 1/2 to 2 years old and are a minimum of 5″-8″ long, although some will exceed 8.” All fish possess a fish health certificate and are fully feed trained to eat fish food. If VHS testing is needed to cross a state line, we can have that done as well, but it does take time and there would be an additional charge for that. Our fish are inspected and monitored by staff and a fish biologist to insure the highest quality fish possible. We do not have the ability to haul large quantities of fish long distances, but can haul a couple hundred fish for a reasonable distance.

We are a local producer of Freshwater Prawns (shrimp). We harvest once year which is generally the 3rd weekend in September. We then sell pond-side at our Farm that weekend. We do supply (When available) prawns to a local restaurant. We also sell Prawns once a year at a local festival held in Urbana Ohio. This Festival is the Fish and Shrimp Festival. We sell our food fish tilapia year round and our pond stocking tilapia during the late spring/early summer. Most of our tilapia are delivered to local grocery stores. You can also pick up your fish from the farm by making an appointment. Our food fish range from 1.5 to 2 lbs. per fish and our pond stocking fish can vary depending on your needs but most are 6 to 8 inches long.
