Grilled Paddlefish Taco Bowl with Lime Slaw
Ingredients
- 1 1/3 lbs. paddlefish meat
- 1 lime, juice
- 2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp oregano
- salt and pepper
- 3 cups cabbage, shredded
- 1/4 cup cilantro
- 4 green onion, sliced
- 1 Tbsp mayonnaise
- 1 1/2 tsp honey
- 1/2 tsp cumin
- 1 avocado, sliced
Directions
- Squeeze the lime juice onto the fish. Sprinkle with chili powder, garlic powder, onion powder, oregano, and salt and pepper to taste. Let rest for 15 to 20 minutes.
- Meanwhile make the lime slaw dressing by combining mayonnaise, lime juice, honey, and cumin. Toss with cabbage, cilantro, and green onions. Season with salt and pepper to taste. Set aside.
- Preheat grill or broiler to medium-high heat.
- Place the fish on a piece of foil or grilling plate and place it on the grill. Grill or broil for 6-8 minutes or until the fish cooked.
- Serve with slaw and avocado.
Substation Tip
Any firm white fish can be substituted for paddlefish.
