I spent over 30 years in the restaurant business as a chef and restaurateur. This experience shifted my perspective on the food system supply chain. I decided to participate in sustainable farming practices and utilized aquaponic and aquaculture concepts in a Yellow Perch (YEP) hatchery. Our innovation, versatility, and dedication to bolstering a sustainable food supply enable us to create a safer, more biosecure, and delicious product that people of all ages can enjoy!
