BBQ Shrimp Skewers
- 1 lb shrimp (medium or large), peeled and cleaned
- 1/4 cup olive oil
- 1 Tbsp chopped parsley
- 1/2 tsp oregano
- 2 cloves of garlic, minced
- 1/4 - 1/2 tsp salt
- 2 tsp coarsely ground black pepper
- 2 Tbsp lemon juice
- Place shrimp in a large bowl.
- Combine all other ingredients and pour over the shrimp.
- Mix well.
- Refrigerate for at least one hour.
- Put shrimp on skewers and each side grill for three minutes.
- Use extra marinade to baste shrimp while it cooks.
