BBQ Shrimp Skewers

Ingredients

  • 1 lb shrimp (medium or large), peeled and cleaned
  • 1/4 cup olive oil
  • 1 Tbsp chopped parsley
  • 1/2 tsp oregano
  • 2 cloves of garlic, minced
  • 1/4 - 1/2 tsp salt
  • 2 tsp coarsely ground black pepper
  • 2 Tbsp lemon juice

Directions

  1. Place shrimp in a large bowl.
  2. Combine all other ingredients and pour over the shrimp.
  3. Mix well.
  4. Refrigerate for at least one hour.
  5. Put shrimp on skewers and each side grill for three minutes.
  6. Use extra marinade to baste shrimp while it cooks.
